Chorizo a la sidra (Chorizo in cider)
A very simple tapas dish that has its roots in the Asturias region that is famous in Spain for cider making. This great tapas is served and loved all
over Spain however!
Ingredients (To serve tapas for 4 persons)
800 grams of fresh chorizo sausages (sold in some of the bigger supermarkets or in a delicatessen)
1 small onion
1 can/bottle 250 ml of natural cider (still)
Table spoon of olive oil
Method
Add the olive oil to a saucepan, put on a low to medium heat and chop the chorizo in to even sized chunks and add to the oil and fry gently.
Thinly slice the onion and add to the pan, fry for a couple of minutes and then add a little of the cider.
Simmer the cider hard and as it reduces then keep adding a little of the cider at a time allowing it to reduce each time.
When the cider is all used and the cider is reduced to a thick sauce then it is ready to serve in your favourite tapas bowls. You will see that the the oils and spices from the chorizos will have oozed out and combined withe the reduced cider.
Eat with some fresh crusty bread and enjoy!
